Beachy's Asian Chicken Salad

I had to share this with you! I modified several recipes from asian salads to make this my own.

Salad:
1 bag of slaw (cabbage or broccoli) or mixed greens
1 shredded chicken breast
2 sliced green onions
1 pkg uncooked ramen noodles (pounded to pieces)
2 T sunflower seeds
1/4 c sliced almonds or cashews
1/2 c drained pineapple tidbits

Toss.

Dressing:
1/4 c olive oil
4 pkts Splenda
4 T red wine vinegar
1 pkt oriental seasoning from ramen noodles

Wisk together and toss into salad.

Don't heat up your kitchen cooking tonight! Make this yummy treat!

ESP...we have Wednesday lunch meetings and someone usually takes turns bringing a fun salad or dessert. We all agreed that next week was asian salad week. I love this recipe! You are so right, it is a great cool, summer salad.
