I love BLT's. They are especially great in the summer months with a big Tervis Tumbler of iced tea. Mr. Beachy and I usually have them for brunch every weekend (with Amish bacon...Mmmm!). I'm cutting carbs and not eating bread for now and wanted the same flavors of the sandwich. This recipe did not dissappoint! In fact, I polished this off so fast I had no time for a picture! I'll be making these again for breakfast this weekend and put this into my regular recipe file!
½ cup raw chopped tomatoes
3 slices bacon, cooked until crisp and crumbled (I used half a package of real bacon bits from Publix. They are nice, big pieces and I didn't even have to heat my skillet!)
2 tablespoons mayonnaise (I only use Duke's. So good!)
Black pepper to taste
3 to 4 large leaves of green lettuce
Mix chopped tomato with crumbled bacon, mayonnaise, and a generous amount of pepper. Spoon mixture into the center of the leaves, and wrap in either a burrito or taco shape.
Try it! I added a little bit of last night's roasted chicken for some extra protein. Talk about good!
