On the Menu

Yesterday I decided to fix a couple recipes that I've been eyeing for quite a while. First up: Asian Cole Slaw! Now Mr. Beachy is not a fan of cole slaw. Not. One. Bit. However, I fixed this and he LOVED it. This goes into my regular rotation.



Wisk together:
1 C. Olive Oil (I used light)
1/2 C. Sugar
1 T. Pepper
6 T. Red Wine Vinegar
2 Packets Seasoning from Ramen Noodles (I had oriental & chicken on hand)

Then add:
1 16 oz. pkg cole slaw mix
1 12 oz pkg broccoli slaw
1 pkg ramen noodles (broken up)
4 T. sunflower seeds
1 C. sliced almonds

Toss & enjoy. I like to eat it right away. It's super crunchy.

For dinner I made these beautiful Stuffed Shells. Mr. Beachy thought these were great too.



Boil 1 Box Jumbo Shells according to package directions.

Cook together:
1lb sausage
1/2 C. Onion
Set aside.

In a bowl mix together:
1 box chopped, frozen spinach (defrosted, drained)
12 oz. container part-skim ricotta
1/4 C. Bread Crumbs
1 Egg
Salt & Pepper to taste

Add Sausage mixture to cheese mixture. In a 9 x 13 pan, add 1 14 oz. can diced tomatoes (I used fire roasted). Stuff shells with sausage/cheese mixture and top with another can of diced tomatoes and then 1 - 2 C. shredded Italian cheese blend. Bake covered at 375 for 35 minutes. Uncover and place under the broiler for a couple minutes for a golden cheese color.

I' so going to try the salad, don't know what Ramen Noodles are, but I'm sure I'll find them somewhere in the store up here in New England.

I've made that Asian cole slaw too! It's always a delicious hit!
