I'm making and giving Christmas Bark to several people this year, including co-workers. It's made with white chocolate, pistachios and dried cranberries so it's very Christmas-y! Here's the recipe:
1 cup coarsely chopped pistachios
1 cup dried cranberries
24 oz white chocolate chips
Line a baking sheet with foil. In a bowl, combine the pistachios and cranberries. Set aside half.
In a bowl set over hot (not boiling) water, melt the chocolate. Remove from heat and stir in half of the pistachio & cranberries.
Spread mixture evenly over baking sheet. Sprinkle the reserved pistachios and cranberries over the chocolate using a spatula to gently press them in. Refrigerate for 30 minutes. Break hardened bark into uneven pieces. (Makes 2 pounds).
I put 3 large pieces in a cellophane bag and tie with a Christmas ribbon. This is an easy, homemade, easy on the budget gift!

I did chocolate bark a few years back and it was wonderful - I swirled together melted dark, milk, and white chocolate to look all pretty and then sprinkled it with crushed peppermints - yumm. I love the idea of pistachios and cranberries!
