Tropical Chicken Pizza

I love Friday pizza nights. A movie, a pie, Mr. Beachy and all is right with the world. Tonight, here's what's on the menu:

Tropical Chicken Pizza

Shredded, cooked chicken (I'm using leftovers from last night's dinner. You can go with rotissiere or use a couple of chicken breasts)
2 minced garlic cloves
1 T. olive oil
Red onion slices
Your favorite BBQ sauce
2 T. fresh chopped cilantro
6 oz. can crushed pineapple, drained
8 oz. bag mozarella
1 pizza dough (I get a fresh one from Publix. Feel free to use your favorite).

Saute garlic for a couple minutes. Add chicken to warm and 1/2 C. BBQ sauce. Prepare your pizza dough and add a little extra BBQ sauce on top. Sprinkle on half the cheese. Top with chicken mixture, pineapple and remaining cheese. Bake at about 500 for 10 minutes til bubbly. Top with cilantro and onion slices.
