A New Sunday Favorite
On most Sunday nights, I make roast chicken for Mr. Beachy. Last night, my bird was still not defrosted enough so I took a package of pork sirloin chops ($2.92 in the bargain section at Walmart), browned them in the skillet, tranferred them to a glass baking dish and poured a can of reduced fat cream of chicken soup over them. They bake, uncovered in the oven for an hour at 350 degrees. You can serve them over noodles or rice, add a salad and you have a comforting, inexpensive dinner any night of the week.
