My Sister's Chicken

Want to make my sister's "Weekend Surprise" chicken? Sure you do! It's the most tender, fall off the bone chicken I've ever had!

* Put leg quarters in a 9 x 13 baking dish. We fit 4 large ones in our baking dish.

* Use 1 to 1 1/2 bottles of your favorite beer to pour in the dish. It should just be about 1/2 inch deep in the pan. My sister uses Michelob Ultra rasberry pomegranate, but you could use cider beer, Coronas with lime, or whatever you feel like. Even a plain old can of Bud will work great.

* Sprinkle on the following: Sazon (found in the Latin Foods section of most every store), Hooter's Seasoning (or any all purpose seasoning), dried dill, and grated parmesean.

* Tightly cover with foil and bake at 350 for an hour. Uncover and bake for another hour.

If you'd like to make a side with it, I suggest my bother-in-law's new favorite way to eat broccoli. This method will also work with carrots, and it is amazing with cauliflower. Pick any one or combination of these three veggies. Chop the cauliflower/broccoli into florets and the carrots into bite size pieces (or use the baby ones). Drizzle with olive oil and toss with salt & pepper. Put the veggies on a cookie sheet and put in the oven with the chicken about 30-40 minutes before you are ready to take your bird out (carrots should go in about 50 minutes before). The broccoli and/or cauliflower will come out roasted and crispy on the outside, soft on the inside and have a nice, nutty flavor.

Talk about an inexpensive meal to make! Leg quarters can be had on sale for 59 cents a pound! Give it a try and let me know what you think!

Do you think this recipe would work with the breast part of the chicken? I am not much for dark meat.
