Easy on the Budget Retro Cooking
When I was making my little strawberry shortcakes with Bisquick yesterday I was reminded of the Impossible Pie my mom used to make all the time when we were younger. I googled it and got the base recipe and a lot of great ideas for variations. Impossible Pie is basically a crustless quiche and was a staple at my house growing up. We had the ham and broccoli version most often but there are so many other ways to be creative with this recipe. It's also pretty budget friendly and a great way to clean up the leftovers in your fridge. Wanna try it? Here's the base recipe:
BASE:
1 1/2 C. Milk
3/4 C. Bisquick
3 eggs
Salt & Pepper
FILLINGS:
1/2 to 1 C. Chopped, cooked meat
3/4 to 1 C. shredded cheese
3/4 to 1 C. vegetables (chopped smaller if using raw)
SPICES: As desired
Preheat oven to 400 and grease a 9 inch pie plate. Put fillings in pie plate. Mix base ingredients in another bowl until smooth and pour over fillings in pie plate. Bake 25 - 35 minutes. (Knife inserted in center should come out clean, top is golden brown in color). Cool 5 minutes.
You can see how creative you can become with this! Here are just a few ideas:
PHILLY: Roast beef, onion, green pepper, provolone
REUBEN: Corned beef, sauerkraut, swiss
RELLENOS: Whole green chilies stuffed w/cheese cubes
QUESEDILLA: Canned green chilies, chicken, cheddar
Ham, broccoli, cheddar
Ham, mushrooms, swiss
Chicken, celery, onion, cashews, jack
Bacon, asparagus, swiss
Tuna, peas, cheddar
Shrimp, asparagus, swiss
Sliced, cooked potato, onions, chive flavored cream cheese

Leftover potroast or meatloaf
mashed potatoes, shredded cheese, peas w/meatloaf, mixed veggies w/the potroast. Great try these!
