Beachy on a Budget and Dream Boat Tuesday

I have been trying some of the budget friendly recipes from Simply Recipes. Last night I made this meatloaf. It was delicious! This weekend I also tried this mushroom pie (like a quiche) for Sunday brunch. I substituted swiss cheese and next time I would add onion but lawsie mercy it was good. I recommend both. I am also planning to try the homemade chicken and rice casserole and the hamburger and macaroni.

Since the Beachy's are temporarily down to one income, I am also looking for money saving tips. If you have a particularly good one (recipe, making things stretch, etc.), I'd love to hear it. Right now I am doing budget friendly meal planning, eating lunch at home, not running a/c or heat (which I can really only do because we are in SW Florida), cutting cell phone plans back, making use of Netflix (when you can't spend money out, I think it's worth the few bucks we spend on this), and walking when we can. As far as grocery goes, I don't think there's a better deal out there than buying whole chickens when they go on sale. I bought 4 this weekend at 79 cents a pound. I roast them like this. We have enough leftovers from Sunday night roast chicken to have chicken taco Tuesdays or for salads through the week.
Now let's do a total 180. I haven't done "Dream Boat" posts for a LONG time, but dammit it's fun!

This is realistic on one salary right? Maybe if I get rid of Netflix...

haha o gosh, well if it makes you feel any better i eat a lottt of pasta - gotta love cheap stuff!

I would ditch Netflix in a heartbeat for a boat that I'd live on :-)
