WW Friendly Pizza Recipe

Last Friday night I made pizza. I make pizza every Friday night, but I thought this particular recipe was worth sharing.

Sorry for the lack of pictures. It was devoured before I could take any!

You will need:
Pizza crust of your choice
Sundried tomato pesto
2% reduced fat mozarella
Sundried tomato chicken sausage
Mushrooms

The first 3 ingredients are key. After that you could use different veggies or omit the sausage, etc. I use a thin crust Boboli, but also like using pita and making mini pizzas.

To make the pizza, lightly spread pesto over crust. You don't need a thick layer like traditional tomato sauce. For a large pizza I would suggest 2 T. max. Add your toppings. Cover with cheese. Sprinkle with herbs. I used oregano and crushed red pepper flakes. Bake according to crust package directions.

A few years ago I would buy a product just here and there and now this year I get a package (or 3) every week! In our little beach town I can get a lot of things, but there isn't a lot of variety so I started doing a lot of online shopping. Here's what I've bought recently:

I have to say that I VERY rarely have to return anything and I love the fact that no one has tried on the clothes before me or rifled through the box before me. Artichoke Strata

I l-o-v-e love strata. I've never made one that was not a breakfast version so this immediately caught my eye. This recipe is adapted from Cooking Light magazine and it is sooooo delish. I served it with grilled chicken breasts and a green salad. this one goes into my monthly rotation.

YIELD: 6 servings

TOTAL: 1 HOURS, 39 MINUTES
COURSE: Main Dishes

Ingredients
1 teaspoon olive oil
1/2 cup finely chopped onion
1 can quartered artichokes
1 cup fresh, sliced mushrooms
2 garlic cloves, minced
1/2 teaspoon poultry seasoning
1 3/4 cups 1% low-fat milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 large eggs
1/3 cup (about 1 1/2 ounces) grated Parmigiano-Reggiano cheese
1/2 (1-pound) loaf country-style white bread, cut into 1-inch cubes (about 5 cups)
Cooking spray
3/4 cup (3 ounces) crumbled goat cheese, divided

Preparation

1. Heat a large nonstick skillet over medium heat. Add olive oil to pan; swirl to coat. Add shallots, and cook for 2 minutes, stirring frequently. Stir in artichoke hearts and garlic; cook for 8 minutes or until artichoke hearts begin to brown, stirring occasionally. Remove from heat, and stir in herbes de Provence. Cool 10 minutes.

2. Combine milk, black pepper, salt, and eggs in a large bowl, stirring with a whisk. Add Parmigiano-Reggiano cheese and bread; toss gently to combine. Stir in artichoke mixture, and let stand for 20 minutes.

3. Preheat oven to 375°.

4. Spoon half of bread mixture into an 8-inch square glass or ceramic baking dish coated with cooking spray. Sprinkle with half of goat cheese, and top with remaining bread mixture. Sprinkle remaining half of goat cheese over top. Bake at 375° for 50 minutes or until browned and bubbly.

I'm back! Our trip to St. Lucia was amazing! We stayed at Sandals La Toc. I've been recovering all week and finally feel really good today! It helped that I got in be at 8:00 last night.

Tonight I'm looking forward to enjoying our own little resort town. I'm making lightened up Bang Bang Shrimp, a Thai seafood salad and picking up a couple of sushi rolls along with champagne. Mr. Beachy and I are going to be floating in the pool with drink in hand by 5:00 and when we are sufficiently relaxed we'll have dinner. We really don't have any other plans for the weekend other than to enjoy being home.

...we will be leaving for our honeymoon/anniversary trip to St. Lucia!

This is the trip of a lifetime and we can't wait. Some activites we have planned include shopping, a land & sea tour of the island, a sunset cruise and even ZIP-LINING! I'm pretty nervous about that but I know we are going to have the best time. I've got an almost completely new wardrobe to wear, new camera, new waterproof camcorder, new Vera Bradley bags and most importantly my best friend and husband to spend all of this time with. Tuesday was the anniversary of the night he proposed and just 12 short days later we were married on the island of Boca Grande. This has been the happiest year of my life and I am thrilled beyond words that we will end our first year of marriage and begin our second in St. Lucia!

Weight Watchers Tips & Tricks

I have been an official WW since July and have managed to lose 46 pounds. I was asked to share some tips and tricks I use to be successful.

I use the WW Online program. It fits into my lifestyle perfectly. I know I wouldn't go to a meeting but I am on the computer all day so its easy to track my points that way. I also own a WW calculator which helps when I am not able to be by a computer. I plan to get an iphone when its time to upgrade my cell so I am able to use the app WW offers.

I plan my points budget first thing in the morning. I do all the shopping and all of the cooking so I know exactly what we are eating every night. I also buy breakfast and lunches to take to work. I have a cute little lunch bag that my sister got me that I can fill with hummus, carrots, string cheese, sandwiches, leftovers, Lean Cuisines, fruit, etc.

I only do cocktails one night a week. Fridays. With homade WW friendly pizza. It's a wonderful reward for being so good all week long.

I don't really like to work out so I haven't done that at this point. I do take beach walks occasionally or play wii but its not consistent.

I had a plateau that lasted about 2-3 months. When I started drinking all of my water again I dropped 5 pounds. Water is key. I drink diet soda but only when I get off work. I have to drink water all day long.

Today is the day to celebrate all things Louisiana! As a former resident of the state of Louisiana, I'd like to share a deliciously easy recipe for a New Orleans staple: The Shrimp Po'Boy. The sandwich is traditionally stuffed with fried shrimp, but this version is fresh and flavorful and keeps it on the lighter side...

You'll need -

Loaf of fresh French bread (Publix does a nice job with theirs)
1 lb Fresh shrimp (peeled and deveined)
Olive oil spray (like Pam)
Lettuce
Sliced tomatoes
Dill pickle slices
Light mayo
Salt
Pepper
Chopped garlic
Fresh parsley
Cajun Seasoning
Lemon

Preheat oven to 350. Slice bread into 6 servings and then slice in half, leaving one side unsliced (so it opens like a book). Lightly spray the inside of the bread with olive oil and place on a cookie sheet in the oven for about 4 minutes to toast. While your bread is toasting, toss shrimp with salt, pepper, garlic, parsley and cajun spice and add to a hot skillet. Squeeze a lemon over the shrimp and cook to a pretty pink.

To serve, be sure to "dress" the sandwich like a local New Orlenian: Slather bread with mayo and pile on lettuce, tomatoes, pickles and shrimp. Lassiez le bon temps rouler!

This weekend Mr. Beachy and I went to the Strawberry Festival on Boca Grande. We ate deliciously fresh, homemade strawberry shortcake in the sun and I bought two hats for our upcoming trip to St. Lucia. While walking back to the car I snapped a few photos with my phone and thought I'd share. It is a beautiful time of year here in the sunshine state.

I've been doing my Weight Watchers plan for about 5 months now and am down a total of 40 pounds! Yay me!

I have been taking my breakfast and lunch to work, for the most part, and am starting to get a little tired of my regular food. I bring: (individually wrapped/packaged):

Carrots and hummus for breakfast

For lunch I have a selection of the following:

lean meat on a sandwich thin
fruit
cottage cheese
sugar free pudding
sun chips
an occasional chocolate

Once in a while I will go out to Panera *YUM* or get a lunch out of the cafeteria.

I stock our fridge with the above stapels for me and Mr. Beachy to be able to grab and throw in our lunch boxes on the way out the door.

What are your staples? Do you have any fun ideas for me?

Football snacking and New Year's stuff

Happy New Year! I'm so excited for this year! Mr. Beachy and I are dropping some pounds and gearing up for our anniversary trip to St. Lucia in the spring! We've never even had passports before so this is really exciting for us.

We had an early New Year's party last Thursday and stayed up way too late (5:00!!!) so on New Year's Eve we were in bed by 9:30! :)

I brought this dip to our early party and everyone loved it. It is a lightened up version of a seven layer dip and is absolutely delicious!

Taco Dip

8 oz 1/3 reduced fat cream cheese, softened
8 oz light sour cream
16 oz salsa
packet of taco seasoning
3 chopped tomatoes
2% reduced fat shredded cheddar cheese
shredded lettuce
black olives
sliced green onions

Mix the first 4 ingredients well. A hand mixer works well for this step. Layer lettuce, cheese, tomatoes, olives and onions. Serve with tortilla chips.

It's so easy and super tasty. I highly recommend it for any football party you have coming up.

A Christmas Wish

This time of year is tough for me. I love the music, the lights, the movies, decorations and food, but at leat 10 times a day I think of my mom. Yesterday was my birthday and she didn't call to sing to me. Whenever I hear Silent Night I have to turn the channel or leave the room. Little things can make my eyes sting with tears and wish I could have her back for just a few minutes.

My Christmas wish for your family is to absolutely love and treasure one another. Nothing is more important. We get all wrapped up in what gift we will get for the boss or will I get an iPad this year, but none of that truly matters when the person who you most want to give a gift to is no longer there.

Have a wonderful, memory-filled Christmas with your loved ones and thanks for reading again this year.

A Beachy Holiday Tradition

Last year I didn't have the pictures to show you but this year I wanted to be sure to share the lighting of the Boca Grande lighthouse for Christmas. Mr. Beachy and I went to the island on Saturday afternoon for the lighting of the downtown Christmas tree and the lighthouse. Mr. Beachy followed it up by taking me to a delicious sushi dinner. Yum!

Last year we were able to meet the lady who grew up there! Can you imagine growing up in a lighthouse and having the beach as your backyard?

We've had a fun-filled couple of weeks. Hope your Christmas season is and continues to be merry.

Just some odds & ends

This week I've been getting back in the swing of things after a wonderful four days off for Thanksgiving with Mr. Beachy. Thanksgiving was a quiet day in with a healthy and delicious dinner.We took a day trip to the island of Boca Grande on Saturday. I did some Christmas shopping and found a lot of really nice things while Mr. Beachy worked. We had a wonderful lunch at the beach at South Beach Bar and Grill - where we had dinner on our wedding night and headed home for a relaxing evening of sundowners on the lanai. The rest of the weekend I decorated for Christmas. I'll post a picture of our Christmas Palm Tree later tomorrow if I remember to take one tonight.

I've also been learning the updatedWeight Watchers plan this week. I've been following WW since August and it's wonderful! It's the easiest diet I've ever been on.

I wrapped up most of my holiday shopping this week. I have a couple more gifts to buy but I know what I'm getting so it shouldn't be difficult. I used the internet for my family's gifts and just had them sent directly to my Dad's house. Easy peasy.

So to recap, life is good and the livin' is easy. Hoping the same for you this holiday season.

Upside Down Turkey

These days everyone has a diffferent way to cook their turkey. Brine, dry brine, deep fry, roasted, etc. I'm here to offer one more suggestion... Last year I roasted mine upside down for the first time. Have you heard of this? It was, in fact, the juiciest turkey I've ever tasted and it is easy! Roast your bird breast side down (according to your temperature and size recommendations) until you have about 30-40 minutes cooking time left. Turn the bird over at this point so you get the beautiful golden brown Thanksgiving Day color on it. Everything else is the same. Roasting it breast side down ensures that all of those juices run into the breasts and other meat instead of dripping away from it. You will still have plently of drippings for gravy and you can brine if you'd like. My family just raved about it and yours will too!

Myrtle Beach Trip - Another stop on our honeymoon tour!

We had a great little trip to Myrtle Beach! The views from our room were incredible (above), the leaves were turning and their was a chill in the air! It sure was colder than Florida.

We went to the Ripley's Aquarium, and did a lot of shopping at Broadway on the Beach. We had a great fine dining experience at Croissants Bakery & Restaurant with some beautiful wines and a delicious lunch of scallop sliders and ahi tuna salad at Tommy Bahama.

We stayed at the Caravelle Resort which had great heated pools, indoor and out, jacuzzi, a lazy river, indoor and outdoor bars, and a really nice little restaurant where we had breakfast each day.

The town was very quiet and I know that has a lot to do with the time of year we visited, but it was a GREAT time to go there for that reason! I don't really care for crowds and it was very refreshing and relaxing to not have to fight them on vacation.

Myrtle Beach

Mr. Beachy and I are heading north this weekend to Myrtle Beach! On our itinerary is the Ripley's Aquarium, Market Common & Boardwalk on the Beach, Brookgreen Gardens, the beach, and trying to find a spot to see the Huskers play on Saturday. Go Big Red!

It's a mini-honeymoon and should be lots of fun. Back next week with details and pics!

I'm now down 18.5 pounds and feeling great! The best part about Weight Watchers for me has been that I don't have to give ANYTHING up! I just plan for it and track it. I drink wine make amazing pizza every Friday night. I am eating a fun size bag of M & M's right now! I wish I would have done this years ago! I know there are weight watchers like me out there, so what are your favorite things about the program? Do you have any tips, tricks or a great recipe to share?

Even though it is 88 degrees out today, I am loving the low humidity. I'm looking forward to doing some fall decorating now that it's October. I don't do much since s lot of it looks out of place in a tropical setting, but I have a few fun things to set out.
Work has been crazy busy. It's finally settling down this week after a month of me running around like a chicken with its head cut off.
I am working this weight watchers thing! I've lost 16 pounds and I feel really good! Mr. Beachy is eating whatever I eat for dinner and is losing too. We are trying new recipes and I'm really enjoying the challenge of making healthy meals that we really like. With fall here it will be fun to come up with pumpkin, chili, soups, and other meals that are satisfying and comforting without being too diet-y.
My sister and her family moved back up north this month. My dad is loving having the company and the baby around. I'm really, truly happy for all of them, but I still miss my sister and niece.
I absolutely love being married to Mr. Beachy. We've never had so much fun and feel more in love everyday.
We are planning another mini-honeymoon in the next few weeks to Myrtle Beach! Neither of us has been there so we are really looking forward to it!

Weight Watchers Recipe: Taste Tested, Husband Approved

We liked it better than take out and you can always just sub-out chicken, different veggies, etc. I'm making a mushroom chicken version tonight.

Sesame Beef Stir-Fry

1 pound(s) asparagus, fresh, tough ends trimmed
3/4 cup(s) reduced-sodium chicken broth
3 Tbsp low-sodium soy sauce
1 Tbsp cornstarch
1 Tbsp vegetable oil
16 oz lean beef round, top, or 1 pound, trimmed of all visible fat and cut into 2 x 1⁄8-inch strips
1 Tbsp ginger root, fresh, peeled and minced
2 clove(s) garlic clove(s), minced
1 Tbsp sesame seeds, toasted

Cut off the asparagus tips and put in a medium bowl. Cut the asparagus spears on a long diagonal into 1⁄8-inch-thick slices; add to the asparagus tips. Combine the broth, soy sauce, and cornstarch in a cup. Heat a nonstick wok or large deep skillet over high heat until a drop of water sizzles. Swirl in the oil, then add the beef. Stir-fry until just cooked through, 3–4 minutes. Transfer to a plate. Add the asparagus, ginger, and garlic to the wok; stir-fry until the asparagus is crisp-tender, about 2 minutes. Return the beef with any accumulated juices to the wok. Add the broth mixture and cook, stirring constantly, until the sauce bubbles and thickens, about 1 minute. Transfer the beef and asparagus to a platter, then sprinkle with the sesame seeds. Add the asparagus, ginger, and garlic to the wok; stir-fry until the asparagus is crisp-tender, about 2 minutes. Return the beef with any accumulated juices to the wok. Add the broth mixture and cook, stirring constantly, until the sauce bubbles and thickens, about 1 minute. Transfer the beef and asparagus to a platter, then sprinkle with the sesame seeds. Yields 1 1/4 cups per serving.

For an extra 2 POINTS, serve each portion with 1/2 cup cooked brown rice.

Toasting sesame seeds brings out their nuttiness and turns them a lovely deep golden brown. Cook them over medium heat in a small skillet, tossing them often, until they begin to look shiny and just turn color. Be sure to transfer them to a plate: they will continue to darken if left in the skillet.

Like yesterday

One year ago today I lost my mom to cancer. In many ways, it feels like yesterday. I miss her so much and I don't think that will ever go away, no matter what people have told me. It just becomes a new normal. Today I say my prayers for my Dad, Sister, Grandman, Aunt, Uncles, and other family members missing her and hoping they aren't hurting too badly today.

Thursday, everything changes. The Superdome lights dim. A banner drops. The Who Dat nation is transformed.

But don't kid yourself, New Orleans Saints fans. This won't be easy. We've been lovable losers for a long time. After 43 years below sea level -- literally and figuratively -- it can be dizzying to suddenly find yourself cheering from such lofty heights. Seventy-thousand people fainting will not create the hostile environment Coach Sean Payton is counting on when the Minnesota Vikings come to town for Thursday's nationally televised, prime-time kickoff to the 2010 National Football League season.

So it's important to get your mind right. The Aints ain't dere no more. We are now officially fans of the (ahem) Defending Super Bowl Champions. And we must prepare ourselves accordingly.

Herewith, five tips to ease your transition to the new Who Dat normal.

1. Don't change your underwear.

Or your socks, your shoes, your shirt, or anything else you wore on Feb. 7, 2010. Whatever game-day routine you followed for the playoffs and Super Bowl, follow it again. Same pre-game meal. Same parking spot. Same seat on the sofa. Same spouse -- if you were divorced during the off-season, I'm sorry, you have 48 hours to reconcile.

And for the last time, if you chew gum, it's Juicy Fruit, not bleepin' Spearmint!

2. Parade after the season, not before.

With all due respect to the NFL ... a victory parade for a team that is 0-0? Really? Isn't that like going on your honeymoon before the first date?

Nice gesture, but the reality is that on game day, True Dats only want to be one of three places: in front of a TV; inside the Dome; or outside the Dome, wishing they were inside.

Same goes for the pre-game concert in Jackson Square. Nothing against Taylor Swift and the Dave Matthews Band. It's just that these sorts of slickly produced, made-for-TV concerts, with their carefully rehearsed audiences and crowd control wristbands, lack some essential New Orleans mojo.

We're not a follow-the-script kind of town. We're an onside-kick-to-start-the-second-half-of-the-Super-Bowl kind of town. Do something crazy and unexpected and let a little magic happen. No wristbands required.

Better idea: TiVo the festivities and join the impromptu parade up and down Poydras Street, where you'll probably find some old guy with a trumpet playing "When the Saints Go Marching In" while strangers in Saints jerseys dance like lovers on the sidewalk. It's hard to imagine Taylor Swift's new single topping that.

3. Be nice to Paw-Paw (not).

Trust me, my smack-talking brethren, I know how tempting it is to make wisecracks about how Brett Favre is the only NFL player who wears a Depends jockstrap, how the federal government agreed to refund his entire 2010 salary to the Vikings as part of the Cash for Clunkers program, how he wears a tiara in the locker room so his head coach remembers to genuflect, etc.

But that's not Super Bowl Champion talk. That's Sore Loser talk. That's almost as bad as, "No fair! You hit our quarterback too hard!" Or, "Wait a minute! Our quarterback didn't get to play in overtime, you need to change the rules!"

We're better than that. Brett Favre has never done anything to deserve an ungracious welcome from New Orleans Saints fans. He's a warrior (diva), and a Hall of Famer (in the Drama Queen Hall of Fame). We should greet him with all the respect he deserves (boo him till your lungs melt).

And as soon as the referees start treating him like a Faberge egg, making "blow to the ankle" a 15-yard penalty, flagging every defender who so much as breathes hard on his Pennzoil-injected joints, and otherwise indulging seven months of the Viqueens' whiny-baby roughing-the-geezer complaints, let him really hear it.

4. Ignore the cliches.

Cliche No. 1: "Forget about last season."

Why? So we can remember the Russell Erxleben era?

The memory of last season is the cure for a 40-year case of football fatalism. "Here we go again" is now, "Hey, no problem." "Wait till next year" is now, "Wait till the next play." "I can't bear to look" is now, "Cool. We got this."

Bagheads are then. Super Bowl rings are now.

Never forget.

Cliche No. 2: "Act like you've been there before."

This is how coaches keep exuberant players from getting carried away, but it doesn't apply to New Orleanians. There's no excessive celebration penalty for cities; if there were, they'd have shut this place down centuries ago.

Les bons temps rouler is in our DNA. We're genetically incapable of acting like we've been there before. If we approached these moments with more restraint, more circumspection, more maturity, we'd be ... Minnesotans.

So, if some killjoy starts blabbing about how "even if we win another Super Bowl it'll never be as special as the last one," just tell him this:

True love always feels like the first time.

And then invite him to see for himself on Sunday, Feb. 6, 2011, at Cowboys Stadium in Dallas, site of Super Bowl XLV.

Honeymoon Tour 2010: Key West

Mr. Beachy and I celebrated our new marriage on the island of Key West a couple of weeks ago. We took a quick trip to the island via the Key West Express "Go Fast Boat" out of Fort Myers. I highly recommend this over driving if you close enough. There are indoor or outdoor seats, cocktails, snacks and movies. It sure beats driving!

We strolled along the Harbor Walk in the noon heat and quickly needed a beer. First stop on our way to our hotel:

I've been a fan of Turtle Kraals since I first set foot on Key West. Great food, nice prices and cold drinks. We had a couple cold ones and some oysters.

Our next stop was new for us: Peppers of Key West. Salsas, sauces marinades, etc. They have free tastings so we pulled up a barstool and our tastebuds and dove right in. We ended up getting about 8 sauces... pretty much every thing they put in front of us. Everything was so spicy and delicious. It's on Greene Street so don't miss it. You can also BYOB here. They will even let you bring naked chicken wings to taste sauces!

We finally made it to the La Concha Hotel. The La Concha is the high spot on the island. "The Top" is a bar on the roof of the hotel and a great place to catch a sunset.

They also have a nice pool with a bar about two steps away. We spent a LOT of time here.

Alonzo's (which is on the Harbor Walk, downstairs from the A&B Lobsterhouse) was our Happy Hour snack spot. They have half price on drinks and appetizers. Delicious conch salad!

After our little feast at Alonzo's we went upstairs to Berlin's cigar bar and this was our view.

We sank into these leather chairs and enjoyed the view and after dinner drinks for about an hour before moving on. We headed back towards our hotel, poking our heads in this place and that. We bought some beer and wine and went to the pool, which we had to ourselves for 2 or 3 hours.

Around 10:00 we went back up to our room, to our balcony overlooking Duval Street. We drank wine and order the best pizza ever (Little John's, I think) and people watched before collapsing in bed.

In the morning we walked to the Westin for breakfast at their Bistro. Mojitos, lobster quesedillas, more great food. After, more walking. When we were hot enough we went back to the hotel for more pool time. About 2 hours before our boat left we went to get dinner and ended up at Turtle Kraals again. This time for grilled lobster. It. Was. Amazing.

We had a great little honeymoon trip. We have the best little adventures. Thank you Mr. Beachy!

Weight Watchers

So I bit the bullet and followed in the footsteps of many of my favorite bloggers and joined Weight Watchers. I started 3 weeks ago and am down 9 pounds so far! Even the girls at work noticed!

The only diet I've ever done before has been low carb and while it worked, its not very husband friendly. I'm loving that I can eat or DRINK anything as long as I count it. Even wine and pizza! Woo-hoo!

I'll be checking in with updates every now and then to let you know how I'm doing.

What a Jerk!

Some of the best Jerk Chicken I've ever had (other than Mr. Beachy's) was in Key West. Since Mr. Beachy and I are planning a mini getaway to the Keys in a couple of weeks I wanted to post an amazing recipe for Jerk.

Jamaican Jerk Marinade

2 chopped onions
1 bunch chopped green onions
5 tbsp. soy sauce
2 tbsp. vegetable or olive oil
2 tbsp. apple cider vinegar
1 1/2 tsp. ground tyme
2 tsp. ground allspice (important!)
1 tsp. nutmeg
1 tsp. cinnamon
2 habenaro peppers
2 tsp. ground black pepper
2 tsp. salt
4 tsp. sugar

Place all ingredients in a food processor or blender and mix well. Whether roasting or grilling, this marinade is an incredible way to spice up pork, chicken or beef. Marinate meats overnight in a covered glass dish or in zip lock plastic bags. Refrigerate leftover marinade in a sealed container, and it should last for several weeks.

I really love Publix. I went in Tuesday night with the intention of making hamburgers. Nothing new, creative or fun about that. I rounded the corner by the deli and there was the cute little Apron's lady making Italian Beef sandwiches. She gave me a sample and as soon as I put it in my mouth I knew Mr. Beachy would love it! I took the recipe card and wheeled around collecting my ingredients. Mr. Beachy was thinking we were just having a version of sloppy joe's, but when he tried these I knew it would be a new favorite. You MUST try this:

Ingredients

2 tablespoons extra-virgin olive oil
1 cup pre-diced onions
1 (17-oz) fully cooked beef pot roast (Publix brand)
1 1/2 cups tomato basil pasta sauce
1 cup fried peppers and onions (found in the pickle section)
1 cup mild pepper rings (also in the pickle section)
2 tablespoons garlic powder
2 teaspoons Italian seasoning
6 Bakery French (or regular) Hamburger Buns

Steps

Preheat large saucepan on medium-high 2–3 minutes. Place oil in pan, then add onions; cook and stir 4–5 minutes or until onions begin to brown.

Stir in remaining ingredients (except buns) and cover; bring to a boil. Reduce heat to medium; cook and stir 15–20 minutes or until hot, breaking meat up as it cooks.

Serve on Bakery buns.

CALORIES (per 1/6 recipe) 390kcal; FAT 14g; CHOL 60mg; SODIUM 930mg; CARB 41g; FIBER 3g; PROTEIN 23g; VIT A 25%; VIT C 140%; CALC 4%; IRON 20%

It was the opposite of sunny in the sunshine state this weekend. Friday to Monday we were pounded with rain everyday. There was no pool, beach, or pool for us! We sipped tropical cocktails, trying to will the rain away, but nothin' doin'. We stayed in, except to dodge raindrops for Publix, see the new Tom Cruise movie, Knight and Day (we thought it was a great summer flick), go to Beall's and Target.

Mr. Beachy organized our pantry and a couple kitchen cabinets, one of which holds our cookbooks and spices. We have a lot of cookbooks from Louisiana and even some from up north. We decided on Friday that we would each pick a cookbook and then pick a recipe to make over the weekend. We had so much fun! Mr. Beachy chose Pork Stroganoff from a mushroom themed cookbook (a gift from my mom) and I selected a modified version of Louisiana Stuffed Chicken with Crawfish Sauce from a Hurricane Katrina cookbook. We secured our ingredients and made our dishes on Saturday and Sunday. I'm not sure we could have picked two better recipes! This week I'll be sharing both with you and I hope you try them. Truly delicious and such a fun rainy day project!

It's almost the weekend and I need a cocktail! Here's the recipe for the classic Bahama Mama!

Ingredients
1/2 fluid ounce rum
1/2 fluid ounce coconut-flavored rum
1/2 fluid ounce grenadine syrup
1 fluid ounce orange juice
1 fluid ounce pineapple juice
1 cup crushed ice

Directions
Combine regular rum, rum with coconut flavoring, grenadine, orange juice, pineapple juice and crushed ice in an electric blender. Blend until the drink's consistency is slushy.

Honeymoon Dinner

Here's a peek at the dining room at the Gasparilla Inn on Boca Grande. Isn't it perfect?

We started with seared tuna for Mr. Beachy. Look at those tee-tiny hard boiled eggs at the top of the plate!

My appetizer was fois gras. There was also a beautiful fig compote, orange segments and spinach leaves.

Next up we had salad. Mine was a wonderful heirloom tomato with balsalmic.

Mr. Beachy had the prettiest salad of all time! This was his Caesar! The bottom is a toasted "crouton." The baby romaine hearts are in the middle, the top is a disk of baked parmesean and on top are more baby greens. Gorgeous!

This was the last plate I remembered to photograph. (Hey! It was our honeymoon and all!) It's my filet mignon with mushrooms, potatoes and asparagus.

I get full just thinking about this meal. Amazing, delicious, and beautiful.

Honeymoon Suite

Last weekend we had a mini-honeymoon at the Gasparilla Inn on Boca Grande (my favorite hotel in the WORLD)! We stayed in a beautiful suite.

The hotel is very "Old Florida" and a place that you might swear Lilly Pulitzer had a hand in decorating!

I could LIVE here!

There is much attention to detail When we arrived the general manger called us personally to make sure everything met our expectations and there was also a handwritten note from him along with chocolate dipped strawberries and champagne.

Our view was breathtaking. We overlooked the Pete Dye golf course and just beyond is Gasparilla Sound.

That was our room, but I promise I'll be posting more on our Honeymoon next week! Stay tuned!

Another member of the Greatest Generation was lost yesterday. My grandpa passed away early Wednesday morning. He was a World War II soldier who fought in the Philippines, earned the purple heart, and along the way was asked to be General MacArthur's personal bodyguard (but turned the job down to stay with his troops). After the war, he married my grandma, built a home and farm and raised 4 wonderful children, including my mom. He was the kindest, sweetest man I've ever met.

Right about now I think my mom is showing him around up there, introducing him to all of her friends. They are two peas in a pod, two completely selfless individuals. The world is short two angels.

A Wedding Story

Thanks so much for sticking with me while I took a little honeymoon break from blogging. Not only did I get married but I started a new job in the same week so I've been a busy bride! I'm still waiting on the pictures from our photographer so I hope to share those with you soon. Mr. Beachy and I have been enjoying our new status as husband and wife and this weekend we are taking a mini-honeymoon trip to a very familiar island. I'll be posting pictures Monday, but first I wanted to share a bit more detail of our special day with you!

We booked a beach front condo at The Boca Grande Club. Mr. Beachy made sure I was a very pampered bride that day. He sent me off to the salon for a mani-pedi and style. I picked a simple french manicure (no fake nails, thank you) and hot pink toes. My hair was in an updo with a pink hibiscus I had picked tht morning and a small daisy.

Before the ceremony and before I was dressed, our small group of guests relaxed in the condo with champagne. As it got closer to 7:45 and our photographer and officiant arrived everyone headed down to the beach but my sister, her baby and me. I was zipped into my dress, put on my jewelry and we were off!

There was a perfect "aisle" of sand and shells that led through the palm trees to the bridge over the dune and onto the beach. We were married barefoot at sunset. My dress was a very flowy chiffon number that was beach-perfect. My bouquet was gorgeous. I had fushia tipped pale pink roses and pink carnations and hand-picked pink hibiscus flowers wrapped in aqua satin ribbon that matched Mr. Beachy's shirt. There was a single white daisy in the bouquet in memory of my mom. She carried daisies in her bouquet. We exchanged personal vows with traditional "I do's" and exchanged simple, perfect gold bands.

After the ceremony, we were photographed and drank champagne as the sun went down. It started to get dark so we headed back up to the condo to get ready to go to a restaurant for a small reception. I changed into a knee length, diamond white silk ruffled dress. We ate at South Beach Bar & Grill which is one of my favorite restaurants on the island. We drank more champagne, pina coladas, and had a great seafood meal with fresh snapper, shrimp and conch fritters. We left our guests and went back to the condo and unwrapped some gifts and sat out on the lanai and listened to the live band playing over at the tiki bar.

We had the best wedding and perfect day. We are blessed and in love. Thanks for letting me share it with you.

This past weekend Mr. Beachy and I went to Relay for Life on Boca Grande. What an amazing event. My Mom was a supporter before she was diagnosed with breast cancer.

Just steps away from the event was this:

It gave me a breathtaking view while I took time away from the action of the event to remember my Mom.

It also reminded me of how lucky I am to live where I do.

On another note, about a week ago I told y'all about a job I was interviewing for. Well, I GOT IT! I am so excited. It's a great position with a great bump in salary and wonderful benefits. It also means I got to get a new work wardrobe! I start in a week and a half. Can't wait!

Spring Salad: Layered Caribbean Chicken Salad

What a beautiful dish to bring to a barbeque or shower or to serve to your girlfriends! This is a must try. My sister is coming for the weekend with the baby and I know what we are having for lunch! (One modification I might make is to sub half or all of the mango with pineapple).

FOR THE DRESSING:
2 containers (6 Oz. Each) 99% Fat Free Piña Colada Yogurt
3 Tablespoons (up To 4 Tablespoons) Fresh Squeezed Lime Juice
1 teaspoon Caribbean Jerk Seasoning

FOR THE SALAD:
3 cups Shredded Romaine Lettuce
2 cups Cubed Cooked Chicken
8 ounces, weight (2 Cups) Shredded Reduced-fat Colby-Jack Cheese, Divided
1 can (15 Oz. Can) Black Beans, Rinsed And Drained
1-½ cup Diced Peeled Ripe Fresh Mango
½ cups Chopped Seeded Italian Plum Tomatoes (1-2 Medium)
½ cups Thinly Sliced Green Onions
½ cups Cashews

In small bowl, mix all dressing ingredients until well blended. Cover and refrigerate while making the salad. In a 3-4 quart clear glass serving bowl, layer salad ingredients in the following order: shredded lettuce. chicken, 1 cup shredded cheese, black beans, mango, tomatoes, remaining 1 cup shredded cheese and green onions. Spoon half of the dressing evenly over the salad; sprinkle cashews over the top. Serve the remaining dressing on the side. Makes 4-6 servings.

I love Friday pizza nights. A movie, a pie, Mr. Beachy and all is right with the world. Tonight, here's what's on the menu:

Tropical Chicken Pizza

Shredded, cooked chicken (I'm using leftovers from last night's dinner. You can go with rotissiere or use a couple of chicken breasts)
2 minced garlic cloves
1 T. olive oil
Red onion slices
Your favorite BBQ sauce
2 T. fresh chopped cilantro
6 oz. can crushed pineapple, drained
8 oz. bag mozarella
1 pizza dough (I get a fresh one from Publix. Feel free to use your favorite).

Saute garlic for a couple minutes. Add chicken to warm and 1/2 C. BBQ sauce. Prepare your pizza dough and add a little extra BBQ sauce on top. Sprinkle on half the cheese. Top with chicken mixture, pineapple and remaining cheese. Bake at about 500 for 10 minutes til bubbly. Top with cilantro and onion slices.

A few posts ago, I asked y'all for handbag recommendations. I was planning to purchase a Dooney until I read thru my comments. Shoeaddict said her current favorite bag is a Tignanello. Off I went to QVC to check out the bags. I was impressed for several reasons:

They consistently get great reviews from QVC shoppers.
Great colors. Pretty, classic and modern styles.
Leather, leather, leather.
They are more affordable at approximately $100 a bag. 3 bags for the price of 1 Dooney? You had me at hello!

So I've decided on 3 styles and I can get them all!

The first one came Tuesday and was at my front door when I got home from the awful weekend class. I was so impressed!

Lost weekend

Friday thru Monday for at least 9 hours a day I am prepping for a state exam that will allow me to get a license for my job. My brain is mush. Thank you for listening. :)

A Surprise for my Dad!

So I am heading to Illinois for the upcoming weekend to visit my Dad for his birthday. What my Dad doesn't know is that he is going to get to meet his granddaughter for the first time!!!! My sister is coming along with the baby and my dad has no idea. I couldn't be more excited. I will be going to meet my Dad and then we will head over to baggage claim. My sister who will have been hanging out in the terminal will come meet up with us there and surprise my Dad while I video the whole thing! It's such an exciting thing to have such a fun secret!

Brunch: Florida Style

I love making brunch for Mr. Beachy on the weekends. I get up whenever I wake up and trundle off to whip something up. Nine times out of ten, we have BLT's on Saturday or Sunday. This weekend we had them on Saturday. Just in case your wondering here's what you need for my Beachy BLT's: fresh sourdough bread, really good tomatoes, iceberg lettuce, thick cut smoked bacon (I get an Amish kind at our butcher and I pepper it while it cooks), and Duke's mayonaise. Only Duke's will do. Toast your bread, put mayo on both slices. Layer in this order: Bread, bacon, tomato (salt the tomato), 2 lettuce leaves, bread. So tasty.

Sunday, I make a scramble and fresh squeezed Florida Orange Juice.

Ingredients:

6 Bacon strips
2 Diced potatoes
1 Diced onion
Parsley
Red pepper flakes
Oregano
Pepper
Salt
Mushrooms
Cherry tomatoes
3 eggs (beat with a little milk, salt & pepper)
Butter
Shredded cheddar cheese

Begin by frying up your bacon in a skillet. Cook low and slow to prevent the bacon from curling up (I set my electric skillet for about 250 degrees). Pepper both sides of the bacon as it cooks. Drain on a couple of paper towels. Cut bacon into thirds or fourths and set aside.

In the bacon fat, add your diced potatoes and onions and sprinkle with spices. I listed what I used in the ingredients, but feel free to play with any seasonings you like. Cover and cook on medium to medium high until potatoes are tender. Stir potatoes frequently to prevent burning and develop crispy sides.

Add your cherry tomatoes and mushrooms and reduce to medium low.

In another pan, scramble up your 3 egg mixture in a tablespoon or so lf butter. Mmm, butter...

When the eggs are still a bit under cooked, add them to your skillet. You can also add your bacon back at this time.

Now, top your skillet with shredded cheddar cheese. Of course you can use jack or swiss or whatever you have on hand.

Cover the skillet to let the cheese melt. This won't take long.

Stir to combine the eggs and cheese with the potatoes and plate it up!

Now it's time for some fresh Florida Orange Juice! We order a case of oranges every month from one of our local growers. You can too. Nokomis Groves is a great place to start!

Hopefully you've got a juicer. I bought a new one for Mr. Beachy for Christmas this year. His od one had given up.

Mr. Beachy and dicussed giving up several different things. We've landed on red meat (and being from the midwest this is no easy sacrifice). It will be interesting to see if this makes a difference in our overall health. I'm also excited to make new meals with a big ingredient off our menu. Better than Cheddar Bay Biscuits

Last night for Mr. Beachy and my Valentine's dinner I made a slow cooker pork roast with potatoes, carrots, and onions. (I used a packet of brown gravy mix and a packet of slow cooker seasoning mix and added water). I served this ultimate comfort meal with Better than Cheddar Bay Biscuits! So easy and so delicious! All you need to do is follow the recipe for biscuits on the Bisquick box, but add some shredded cheddar cheese. I added about 1/4 to 1/3 of a cup and also added a bit of fresh ground pepper. You may need to add a little splash of water. Mix and bake as directed until golden brown. While the biscuits are baking, melt 2 - 3 tablesoons of butter. Add dried parsley flakes, garlic powder and salt to taste. When the biscuits are done, brush or spoon on your butter mixture. So easy, inexpensive and impressive!

The National Weather Service has issued this weather advisory…... “A rare freeze-over of Hell has caused a strong upsurge in the climate along the Gulf of Mexico that has affected and will continue for the next two weeks to affect residents, particularly in South Louisiana. What began as a poorly defined movement, that has been watched by the National Hurricane Center for over 40 years, quickly strengthened in the late hours of Sunday evening with the eye centering over the Louisiana Superdome. Forecasters have had their eye on the wave as it increased in intensity beginning in mid-September and, except for a brief weakening in late December, has gone unstoppable, resulting in a first ever named Hurricane Who Dat. Forecasters predict Hurricane Who Dat to make landfall on Sunday evening, February 7th, in Miami. This Hurricane brings Shockey waves, a strong Brees and the eye is Sharper than ever. Beware of this strong storm as it has knocked birds out of the skies, like Eagles, Falcons and Cardinals. It has even take down a few Jets. Many animals have been injured as well Bengals, Lions, Buffalos, Panthers and Rams. The magnitude of the storm is so powerful Giants, Patriots, Buccaneers, Raiders and Redskins have been struck down. And you are definitely not safe in the water - it has taken out Dolphins and has even sunk a Viking ship on its path to Miami . Ranchers are warned to protect their little colts, as Hurricane Who Dat can destroy them as they have all other animals in their path. Colts are being advised to retreat to higher ground. While Colts can swim, it is predicted that they will not be able to withstand the Shockey waves and strong Brees Hurricane Who Dat is packing. Residents are being warned to take Hurricane Who Dat seriously. Stay tuned to your local television station for updates.”

Snowy Plover

I have been sick all week! So glad to be feeling better! Today I wanted to share my favorite little beach bird! This guy has been spotted on the beaches of Boca Grande. He might look like 2 cotton balls propped up on toothpicks but this is the Snowy Plover and he is very endangered!

And just look! You would barely see him in the sand!

Weekend Fun & Menus

So sorry I've been MIA this week! Mr. Beachy and I have been out looking for our own little beach house! So exciting! We are going again tonight to look at a condo.

In other exciting news, our favorite little niece/Godchild is coming to visit this weekend so we are getting ready for her visit too! We are really looking forward to seeing her cute little face again!

I hope y'all are ready for baby overload on Monday!

I've got my menu planned for this weekend of entertaining all set and it goes as follows:

Saturday Lunch (no breakfast! we will be too busy getting ready for our guests!): Slow Cooker BBQ Pulled Pork Sandwiches and green salad

Saturday Dinner: Home-made pizza and green salad

Sunday Breakfast: Out to our favorite breakfast restaurant (more on this later)

Sunday Lunch: BLT's

Sunday Supper (the send-off meal): Beef Enchilladas and green salad

Snacks: Chips, Publix Deli Salsa (best store bought salsa ever), Velveeta & rotel queso (did I spell that right?), Florida HoneyBell Oranges, and homemade orange citrus bars with orange glaze (recipe to come soon).

Just add cocktails and we are ready for a weekend of movies, wii, and family!

I must be feeling notstalgic this week for childhood recipes! Here's another oldy/goody that you have to try:

Chocolate Peanut Butter Special K Bars

Ingredients:

1 1/2 cups brown sugar

1/4 cups light corn syrup

2 cups creamy peanut butter

6 cups Special K cereal

1 bag chocolate chips

How to:

In a large pot on medium, combine the brown sugar and corn syrup; mix well. Making sure to scrape down the sides of the bowl. Heat until the mixture starts to bubble around the edges. Add 1 1/2 cups of the peanut butter; stir until smooth and fully incorporated. Add cereal and mix until it is fully coated. Spoon cereal mixture into a well greased 13 x 9-inch pan, pressing down with either clean fingers or the back of a spoon to make sure it is evenly and firmly packed into the pan. In a sauce pan, combine the chocolate chips and the remaining 1/2 cup of peanut butter. Stir until smooth, and spread over the cereal mixture. Let cool completely, and then cut into bars. Do not chill the mixture before cutting.

I love all things beachy, including food. Fresh fish, tropical drinks, key lime pie, conch fritters, shrimp, oysters... I could go on and on and on, BUT there is something to be said for a good old-fashioned midwestern TATER TOT CASSEROLE! It is comfort in a dish my friends! Today I wanted to share this beyond easy recipe:

Tator Tot Casserole

Bag of Tator Tots
Can of Cream of Mushroom Soup
1 - 1/2 lbs Hamburger

Press the hamburger into a glass casserole dish (I usually cut up an onion and mix it in with the burger. Totally optional.) Cover evenly with soup. Top with tots. Bake @ 350 degrees for an hour.

This penny pincher's casserole is so comforting on a chilly winter day and kids LOVE it (not to mention meat and potato loving men)!

Resolutions and Inspired Goals

Kelly (one of my all time favorite bloggers) is hosting "Show Us Your Life" New Year's Resolutions and Goals this week and I'm participating for the first time. I really wanted to share this with you anyway so this was a perfect time!

2009 was the most difficult year of my life. Even the years leading up to it were very hard. Because of the stress and sadness, I didn't any effort into myself or my own health.

My resolution is to get a fresh start, get healthy and lose weight. (I have 2 closets: the one I use right now and the one full of of clothes I can't wear. I'm ready to get back into them)! I am ready to give this to myself. I want to feel good about ME again. I have been strong, but have not been strong enough for myself. This year I am standing up for me.

With this resolution I have set several mini goals and even rewards (including a Dooney & Bourke bag, Reebok Easy Tone shoes, a wii fitness video, etc.) to get me to my goal weight.

I'm inspired to make my ultimate goal to walk in The Susan G. Komen 3 Day for the Cure.

Quick Turkey Tip

Hi all! Hope your Christmas was wonderful! My sister, her husband and their kids came to visit. I made a turkey and wanted to share a quick tip for the most juicy white meat ever! For the first two-thirds of roasting, cook the turkey BREAST SIDE DOWN and cover roasting pan tightly with foil. The turkey will self baste and all of the juices will run into the breast meat. For the last part of cooking, uncover bird and turn to breast side up so the bird gets some nice color.

Try it and you will be a hero! You should have heard the compliments my turkey received Christmas Day!

Yesterday was my 36th birthday. Mr. Beachy sweetly took me away for the weekend and lavished all kinds of attention on me, but yesterday was a hard day. I think 36 is way too young to have birthdays without your mom.

Boca Grande Birthday Weekend

Mr. Beachy surprised me with a stay at the Gasparilla Inn on Boca Grande!

Here's the beach club. Too windy and chilly for a swim this weekend, but isn't it gorgeous?

I'm not a golfer, but this may be one of the prettiest courses I've ever seen!

We had drinks at the hotel bar (called BZ's). It was just a little chilly this weekend so our bartender fixed me up with a couple Nutty Irishmen! Yum!

We had a wonderful dinner on the island at the Pink Elephant. We ate shrimp cocktail, mussels, and a great flatbread topped with duck confit, fresh mozzarella, shitake musrooms and figs.

The room was so beachy. The colors and fabrics were girly and very "Florida."

Christmas Gift Idea #3

Wii is a great gift to guys and families! This is one of the big gifts of 2009. Mr. Beachy has one under the tree along with a Madden game and the wii Resort.

For the girls you can get the wii Fit or EA Active.

Be sure to get enough controllers for everyone!

This system is a blast. It is so interactive and really makes you want to get off the couch! I can't think of anyone who wouldn't love this gift!

Christmas Gift Idea #2: Budget gift

I'm making and giving Christmas Bark to several people this year, including co-workers. It's made with white chocolate, pistachios and dried cranberries so it's very Christmas-y! Here's the recipe:

1 cup coarsely chopped pistachios
1 cup dried cranberries
24 oz white chocolate chips

Line a baking sheet with foil. In a bowl, combine the pistachios and cranberries. Set aside half.

In a bowl set over hot (not boiling) water, melt the chocolate. Remove from heat and stir in half of the pistachio & cranberries.

Spread mixture evenly over baking sheet. Sprinkle the reserved pistachios and cranberries over the chocolate using a spatula to gently press them in. Refrigerate for 30 minutes. Break hardened bark into uneven pieces. (Makes 2 pounds).

I put 3 large pieces in a cellophane bag and tie with a Christmas ribbon. This is an easy, homemade, easy on the budget gift!

Lunch Buddy?

I know the picture quality on this isn't great (shot it with my cell phone) but this big guy was hanging outside my front door when I came home for lunch today! That, my friends is an iguana and he was about 2 1/2 feet long!

There are a lot of these on the island where Mr. Beachy works (Boca Grande), but this is the first I've seen in my neighborhood!

He looks a little like the Grinch to me!

Island Style Fish Fry!

This weekend we went to Gasparilla Island State Park on Boca Grande to Amory Memorial Chapel's 50th Anniversary Fish Fry Festival to support the Port Boca Grande Lighthouse & Museum and the state parks of Gasparilla, Cayo Costa, Stump Pass Beach and Don Pedro.

We ate smoked mullet (below), low country boil, roasted pig, fried snapper, and baked beans. Of course there was great live music and it was a beautiful day!

Baby Shower Strawberry Pineapple Cake

I made and served this delicious cake for my sister's baby shower this past weekend. It's one of my favorite cake recipes and perfect for a baby girl's shower since it's pink!

CAKE:

1 package strawberry cake mix
3/4 cup water
3 eggs
1 (8 1/4oz) can crushed pineapple (reserve 1/2 cup pinapple juice)

Mix all ingredients including 1/4 cup reserved juice. Pour into a 9x13 inch greased and floured pan and bake 35-45. @ 350

FROSTING

1 (3 1/2 oz) package vanilla instant pudding mix
1 cup milk
1 cup cool whip

Mix pudding and milk. Fold pudding mixture and cool whip together. Frost cake, refrigerate.

I've been so busy this past week getting ready for my sister's baby shower! I'm so glad she's hung in this long. Her C-section is scheduled to take place in about 2 weeks, but she's had some contractions. I think we'll make it now! I decided on a pink and green palm tree theme and we are having it at a local restaurant in the party room. Say a little prayer for us that everything goes well. It's my first time planning a shower!
